Kawaguchi-ko's signature dish is hōtō, hand-cut noodles served in a thick miso stew with pumpkin, sweet potato, and mountain vegetables, and this chain's igloo-shaped branch is the most architecturally interesting place to eat it. The bowl that arrives is enormous, steaming, and deeply comforting, especially after a cold morning chasing Fuji views. For the adventurous, they also serve basashi, horsemeat sashimi.
