Koçu notes the spice merchants were among the most respected guilds — their shops were listed as 'gedik' (monopoly), meaning no new spice shop could open in Istanbul without a deceased merchant's spot becoming vacant. A 200-shop limit was enforced by imperial decree.
The moment you walk through the arched entrance, your nose takes over — pyramids of saffron, dried rose petals, sumac, and a dozen varieties of Turkish delight compete for your attention. Built in 1660 to fund the nearby New Mosque, this L-shaped market is smaller and more manageable than the Grand Bazaar. Locals skip the tourist stalls and head to Hasırcılar Caddesi behind the bazaar for the real deals on spices, teas, and dried fruits.
