Tsunahachi has been expertly frying prawns and vegetables for more than 90 years and is an excellent place to get initiated into the art of tempura. Locals know to ask for the inexpensive hiruzen lunch special — which intentionally isn't on the English menu. The indigo noren curtains mark the entrance to this Shinjuku institution, where the tempura arrives golden, light, and impossibly crisp. A perfect introduction for tempura newcomers.
