Twenty-five stalls spread over three floors, each serving up hearty variations of Hiroshima-style okonomiyaki. Pick a floor, find an empty stool, and watch the cook layer batter, cabbage, noodles, and a fried egg on the griddle in front of you. It's touristy but genuinely fun, and chatting with the cooks over the sizzling hot plate is part of the experience. The Hiroshima version, with its distinct layered construction, is fundamentally different from Osaka's mixed style.
