Built by Saladin's general in the 12th century to counter the Crusaders, this Islamic fortress commands unparalleled views over the green hills of the Jordan Valley. Its towers, vaulted halls and labyrinthine corridors are in excellent condition, and on a clear day you can see all the way to the West Bank.
