Sushi doesn’t come much fresher – or more authentic – than at this spot in the heart of Toyosu fish market. The chefs here have been making Edo-style sushi for over 50 years (they formerly had a restaurant in Toyosu’s predecessor, the now-closed Tsukiji fish market), and draw a steady stream of diners after the early morning tuna auction. Don’t be surprised if, in true Edo style, the chefs recommend you forego chopsticks and pick up each piece of sushi by hand instead. Head up to Toyosu’s rooftop terrace to enjoy your sushi with crowd-free views of the Rainbow Bridge.
