Niseko's most famous noodle shop is also famously hard to find, reached via a wooden boardwalk through the trees — and the secluded location is a huge part of the magic. Once inside, you'll watch chef Tatsuri Rai hand-make the buckwheat soba you just ordered, right behind the counter. Order the namako uchi seiro — fresh-made cold noodles, pure and simple — and taste what soba can be when every strand is crafted minutes before it reaches your bowl. The silence of the surrounding forest makes each slurp feel ceremonial.
